Ingredients

  • 6 large egg yolks
  • 7 large egg whites
  • 3 tablespoons granulated sugar
  • 8 ounces high-quality dark chocolate (50–70% cacao), chopped (use up to 9 ounces for a thicker mousse)
  • 10 tablespoons (1¼ sticks) unsalted butter

For Serving

  • 2 teaspoons St. Dalfour Black Cherry Fruit Spread (or Raspberry Fruit Spread, if preferred)

Instructions

1. In a small saucepan over low heat, melt the butter completely. Add the chopped chocolate and stir until smooth. Remove from the heat and let cool slightly.

2. In a large bowl, beat the egg whites with an electric mixer. Gradually add the sugar and continue beating until stiff, glossy peaks form.

3. Whisk the egg yolks into the cooled chocolate and butter mixture until fully combined.

4. Gently fold the chocolate mixture into the whipped egg whites, being careful not to deflate the mixture. Fold just until no streaks remain.

5. Spoon the mousse into individual serving glasses or one large serving bowl. Cover and refrigerate for at least 4–5 hours, preferably overnight, until set.

6. Before serving, top each mousse with a spoonful of St. Dalfour Black Cherry Fruit Spread and enjoy.
