Fig & Zucchini Pizza Sandwich

INGREDIENTS

Dough

  • 4 cups plus 2 tablespoons of pizza flour
  • 4 grams Fresh yeast (about the size of a pea)
  • 1 teaspoon salt
  • 1⅓ cups water

    Filling:

    • ½ jar St. Dalfour Fig Royale Fruit Spread
    • 2 grilled zucchinis
    • 2 burrata balls
    • A handful of arugula

INSTRUCTIONS

  1. In a stand mixer bowl, dissolve the yeast in the water.
  2. Add the flour and knead the dough with a dough hook attached on medium to high speed.
  3. After 10 minutes, add the salt and continue to knead the dough for 3-4 more minutes.
  4. Cover the bowl with a towel and let the dough rest for 30-40 minutes.
  5. Transfer the dough into a large airtight plastic container and refrigerate it for 30-48 hours.
  6. When ready to bake the pizza sandwiches, remove the dough from the fridge and divide it into 4 equal-sized balls.
  7. Place them on a plastic tray, lightly dust with semolina flour to prevent sticking, and cover with plastic wrap.
  8. Let the dough balls rise until doubled in size, or for 2 hours at a warm spot.
  9. When ready to bake, lightly flour the kitchen surface and your hands, and preheat the oven to 250-280°C (about 480-530°F).
  10. Place the dough on top and gently press the dough in the middle with your hands while stretching it to a wider circle, maintaining a fluffy border around the pizza circle.
  11. Brush olive oil onto the surface and fold it in half.
  12. Transfer the dough to the oven and bake for 7-9 minutes or until golden brown.
  13. Let it cool slightly and add your fillings! Start by spreading St. Dalfour fig fruit spread followed by the other fillings.
