Shortbread Holiday Cookies

There’s nothing sweeter than homemade cookies, especially when they're filled with real fruit. These buttery shortbread sandwiches are made with simple ingredients and finished with a spoonful of St. Dalfour Fruit Spread for a naturally sweet, elegant treat. Perfect for gifting, holiday baking, or enjoying with an afternoon cup of tea.

INGREDIENTS

  • 3 cups all-purpose flour

  • 1 cup (2 sticks) unsalted butter, room temperature

  • 1 1/4 cups powdered sugar

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 1 large egg

  • St. Dalfour Fruit Spread (any flavor you love!)

INSTRUCTIONS

  • In a stand mixer fitted with the paddle attachment, beat the butter for about 1 minute until smooth.

  • Add the flour, powdered sugar, and salt; mix for about 30 seconds to combine.

  • Add the egg and vanilla extract and mix on low until the dough comes together.

  • Transfer dough to the counter and gently fold it together — do not knead.

  • Wrap tightly in plastic wrap and refrigerate for 2–3 hours.

  • Preheat oven to 350°F (175°C).

  • Roll dough to about 1/4-inch thickness, cut into shapes, and place on a baking sheet lined with parchment paper.

  • Bake for 10–12 minutes, or until lightly golden on the edges.

  • Let cookies cool completely, then spread 1/2–1 tsp St. Dalfour Fruit Spread on one cookie and gently press another cookie on top to sandwich.

  • Optional: Dust with powdered sugar.
