Sourdough Waffles drizzled with Blueberry Açaí Superfruits

These Sourdough Waffles are not only fluffy and delicious but also packed with a unique tang from the sourdough starter. Topped with our Blueberry Açaí Superfruits Fruit Spread, each bite is a burst of flavor that combines the sweetness of blueberries with the nutritious benefits of Açaí. Perfect for lazy weekend mornings or a special brunch with friends, these waffles are sure to impress.

INGREDIENTS

Overnight Sponge

  • 1 ½ cups all-purpose flour
  • 1 cup sourdough discard
  • 2 tbsp honey or maple syrup
  • 1 cup milk of choice

Batter

  • 1 egg (omit for vegan)
  • ¼ cup melted butter, coconut oil, or ghee
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 tsp baking soda

Blueberry Açaí Syrup

  • 1 jar (6oz) St. Dalfour Blueberry & Açaí Superfruits 
  • 1/3 cup water

INSTRUCTIONS

  1. Mix together the sponge. Cover and rest at room temperature overnight. The next day, the sponge should be quite bubbly and doubled in size.
  2. In a separate bowl, whisk the egg, melted butter or ghee, salt, cinnamon, baking soda, and vanilla.
  3. Add to the sponge and mix to combine (it doesn’t have to be perfectly smooth).
  4. Cook in batches in a preheated waffle iron until golden brown and crispy. Repeat until all the batter is used (approximately 8-10 waffles).
  5. To make the syrup, empty the jar of St. Dalfour Blueberry & Açaí Superfruits Spread into a small saucepan. Fill the jar halfway with water, swish it around to get any remaining fruit bits, and add the water to the saucepan as well.
  6. Simmer on medium heat for 10 to 15 minutes until thickened.
  7. Blend, optionally strain, then allow to cool.
  8. Serve the waffles warm with fresh blueberries and homemade syrup.
