Sourdough Waffles drizzled with Blueberry Açaí Superfruits
These Sourdough Waffles are not only fluffy and delicious but also packed with a unique tang from the sourdough starter. Topped with our Blueberry Açaí Superfruits Fruit Spread, each bite is a burst of flavor that combines the sweetness of blueberries with the nutritious benefits of Açaí. INGREDIENTS
Overnight Sponge
- 1 ½ cups all-purpose flour
- 1 cup sourdough discard
- 2 tbsp honey or maple syrup
- 1 cup milk of choice
Batter
- 1 egg (omit for vegan)
- ¼ cup melted butter, coconut oil, or ghee
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp cinnamon
- 1 tsp baking soda
Blueberry Açaí Syrup
- 1 jar (6oz) St. Dalfour Blueberry & Açaí Superfruits
- 1/3 cup water
INSTRUCTIONS
- Mix together the sponge. Cover and rest at room temperature overnight. The next day, the sponge should be quite bubbly and doubled in size.
- In a separate bowl, whisk the egg, melted butter or ghee, salt, cinnamon, baking soda, and vanilla.
- Add to the sponge and mix to combine (it doesn’t have to be perfectly smooth).
- Cook in batches in a preheated waffle iron until golden brown and crispy. Repeat until all the batter is used (approximately 8-10 waffles).
- To make the syrup, empty the jar of St. Dalfour Blueberry & Açaí Superfruits Spread into a small saucepan. Fill the jar halfway with water, swish it around to get any remaining fruit bits, and add the water to the saucepan as well.
- Simmer on medium heat for 10 to 15 minutes until thickened.
- Blend, optionally strain, then allow to cool.
- Serve the waffles warm with fresh blueberries and homemade syrup.
